Lemon-Mascarpone Pasta Recipe
Bring a large pot of salted water to a boil. Add 12 oz preferred pasta and cook according to package directions. Meanwhile, in a serving bowl whisk together ½ cup mascarpone, zest & juice of one lemon, 1tsp salt, and ½ tsp pepper. When the pasta is done, reserve ½ cup of the pasta cooking water, drain the pasta, and transfer it to a serving dish. Toss the pasta with the mascarpone mixture and add reserved pasta cooking water. Fold in 1 cup of pea shoots & top with pine nuts.
